The production of pasteli does not require any technological prowess, but a very sure knack for mixing the sesame seeds with the honey boiling on the cold marble, to obtain the right crunch and the right taste of caramel. There are several types of pasteli, from the crunchiest to the most supple (melato). We have selected a tragano, rich in sesame and very crunchy.
