Tomato Salad

- 10g Judas Ears mushrooms
- 4 small green zebra tomatoes
- 4 tablespoons cider vinegar
- 1 teaspoon honey
- 4 tablespoons olive oil
- A pinch of fleur de sel
- 2 sprigs fresh mint
- Rehydrate the mushrooms for 20 minutes in cool water.
- Meanwhile, cut the tomatoes and arrange them on the plates.
- Drain the mushrooms.
- Mix vinegar, honey and oil, add mushrooms then leave to soak for 5 minutes. Pour over the tomatoes.
- Sprinkle with fleur de sel and chopped mint.
