Tomato Salad

  • 10g Judas Ears mushrooms
  • 4 small green zebra tomatoes
  • 4 tablespoons cider vinegar
  • 1 teaspoon honey
  • 4 tablespoons olive oil
  • A pinch of fleur de sel
  • 2 sprigs fresh mint
  • Rehydrate the mushrooms for 20 minutes in cool water.
  • Meanwhile, cut the tomatoes and arrange them on the plates.
  • Drain the mushrooms.
  • Mix vinegar, honey and oil, add mushrooms then leave to soak for 5 minutes. Pour over the tomatoes.
  • Sprinkle with fleur de sel and chopped mint.
