Spring starter - Fresh herbs in hummus

Easy hummus recipe, quick and inexpensive. Perfect to amaze your family and friends, during an aperitif or a gourmet starter.

This recipe has been offered by the restaurant “Les Filles”. Find them on their website

  • 1 can of chickpeas drained and cooked
  • 2 tbsp of sesame cream (tahini)
  • 1 tbsp of extra virgin olive oil
  • 1 bunch of coriander
  • The juice of an organic lemon and its zest minced
  • Fleur de sel and Espelette pepper
  • Mix the chickpeas with the sesame cream and lemon juice. Add a bit of water if needed to get a creamy texture.
  • When the mix is smooth, add coriander and olive oil, then mix a few moments
  • Add salt, Espelette pepper and lemon zest.
